Banana Bread Overnight Oats

Ingredients
  • 1 ripe banana, divided use
  • ½ cup rolled or steel cut oats
  • ½ cup milk
  • 2 tablespoons chopped walnuts, divided use
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 teaspoons maple syrup (optional)
Instructions
  1. Mash half of the banana. Slice the other half of the banana and set aside.
  2. Combine the mashed banana, oats, milk, 1 tablespoon of the walnuts, vanilla extract, cinnamon and maple syrup in a container. Mix until well combined.
  3. Top with the sliced bananas and remaining walnuts. Cover and refrigerate overnight.
  4. Serve cold.
