Banana Oatmeal Pancakes

Ingredients
  • 2 ripe bananas
  • 2 eggs
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • Pinch of salt
  • Maple syrup for serving (optional)
Instructions
  1. Combine the bananas, eggs, rolled oats, baking powder and salt in a blender. Blend until mixture is smooth. Let the batter stand for about 10 minutes, or until it has thickened slightly.
  2. Heat a griddle over medium heat. Ladle the batter onto the griddle. Cook the pancakes until they are golden brown, flipping once.
  3. Serve with maple syrup if desired.
