Ingredients
  • 8 bone-in, skin-on Chicken Legs and Thighs
  • 3 Tbsp Olive Oil
  • Seasoning Salt of Preference (We Used Grizzly Joe)
Instructions
Marinate the Chicken:
  1. Rinse chicken pieces under cold water and pat dry with paper towels.
  2. Place chicken into a large mixing bowl. Season chicken to taste with your preferred seasoning salt and then pour olive oil over the chicken, ensuring that each piece gets coated with oil. If necessary, massage the chicken to help get the oil and salt under the skin.
  3. Cover and Refrigerate for at least an hour (two is preferred).
Cook the Chicken:
  1. After the chicken has marinated, start the Traeger Grill in accordance with the instructions and then set to the "Smoke" Setting.
  2. Place the chicken directly onto the grill grate and smoke for an hour.
  3. Increase the temperature to 350F and roast the chicken until the thickest part of the chicken reaches 165F (ensuring that the meat thermometer isn't touching a bone) or cook until the juices run clear (will take about 50 to 60 minutes).
  4. Allow the chicken to rest for 10 minutes and then serve.
