Pasta alla Vodka

Ingredients
  • 8 ounces farfalle pasta, uncooked
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ small onion, chopped
  • 2 cloves garlic, minced
  • ½ cup Vodka
  • 7 ounces tomato puree
  • ½ cup heavy cream
  • ⅛ teaspoon salt
  • Pepper, to taste
  • ½ cup grated Parmesan Cheese
Instructions
  1. Cook pasta to al dente, according to the instructions on the package. Reserve 1 cup of the water which was used to cook the pasta.
  2. Meanwhile, heat olive oil and butter in a large skillet, over medium heat. Add onions and garlic. Sauté until fragrant, about 2 minutes. Add Vodka and cook for another 3 minutes. Add tomato puree and stir to combine.
  3. Reduce heat to low and slowly whisk in cream. Simmer until sauce has thickened slightly, about 5 minutes.
  4. Add pasta and toss to combine. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until sauce has reached desired consistency. Add Parmesan cheese and stir to combine.
  5. Serve hot
