A healthier alternative to traditional risotto.

Ingredients
  • 1 cup quinoa
  • 2 cups water (or amount specified on package)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 8 ounces mushrooms, sliced
  • 3 garlic cloves, minced
  • ½ cup white wine
  • ½ cup half and half
  • Ground nutmeg, to taste
  • Pepper, to taste
  • ½ cup grated Parmesan cheese
  • 4 tablespoons finely chopped parsley
Instructions
  1. Rinse the quinoa and cook according to the instructions on the package, until it is almost cooked all the way through.
  2. Meanwhile, in a large saucepan, heat the olive oil and butter over low heat. Once the butter has melted, add the onions and mushrooms and saute until soft, about 5 minutes.
  3. Add the garlic and saute until fragrant, about 30 seconds. Add the wine and half and half and bring the mixture to a boil over high heat. Add nutmeg and pepper, to taste.
  4. Add the cooked quinoa to the saucepan and stir to combine. Lower the heat and continue to cook until the mixture has thickened, about 2 minutes.
  5. Add the Parmesan cheese and parsley and stir to combine.
  6. Serve immediately.
