Avocado Bacon and Eggs

Ingredients
  • 2 avocados
  • 4 eggs
  • 2 slices cooked bacon, crumbled
  • Salt and pepper, to taste
Instructions
  1. Preheat oven to 425 F.
  2. Carefully cut the avocado in half and remove the pit. If necessary, remove some avocado so that the egg will fit in the middle of the avocado. Crack an egg into each of the avocado halves.
  3. Place all of the avocado halves on a rimmed baking sheet, allowing the edge of the avocado to rest against the side of the baking sheet. Top each avocado half with about a quarter of the crumbled bacon.
  4. Bake until eggs are cooked to desired doneness (I cooked it for about 15 minutes).
  5. Sprinkle with salt and pepper, to taste. Serve warm.
