Garlic Ranch Mashed Potatoes

Ingredients

  • 2 pounds red potatoes
  • 4 garlic cloves peeled
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt plus more, to taste
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon ground black pepper plus more, to taste
  • 1/3 cup milk
  • 2 tablespoons butter

Instructions

  • Place potatoes and garlic in a large Dutch oven. Add cold water to the Dutch oven until the potatoes are just covered in water. Heat the potatoes over high heat until the water comes to a boil. Cover the Dutch oven, reduce heat, and simmer until the potatoes are tender, about 12 minutes. Drain potatoes and garlic.
  • Place potatoes, garlic, parsley, garlic powder, onion powder, 1/2 teaspoon salt, 1/4 teaspoon dill, 1/4 teaspoon pepper, milk and butter in a strong blender. Blend until smooth. Taste potatoes and season with additional salt and pepper, if needed.
  • Serve hot.
